I have cruised the Mediterranean three times and so know a few of the options you'll have.
First, you must book early as the best prices are for those who book up to a year or more in advance. The closer to the cruise date the higher the prices will be. You should also consider cruising from a port other than Southampton to increase your options for a cruise going to places you want to see and also to improve your options for a good price. If you do not want to fly then consider taking a train to Barcelona, Spain which is a major departure port for Mediterranean cruises.
You also need to determine which parts of the Mediterranean you want to see. There are cruises to the Western Mediterranean that go to ports in Spain, Portugal, Gibraltar, Morocco and the Canary Islands. Then there are cruises to the Eastern Mediterranean that go to France, Italy, Greece, Turkey, Egypt, Israel and Dubai. From Southampton your options for the Eastern Mediterranean will be limited because of the greater distance from that departure port.

The farther away you book the better. My husband and I were on a cruise 3 weeks ago that we had booked in February of this year (8 months before departure)..compared to what prices were 2 months before the cruise we saved ourselves around $1000. The earlier you book the more cabin selection you have as well.
Flights to europe are also generally cheaper the farther in advance you book them. They usually release flights and pricing 11 months in advance and its usually cheapest then (except for random seat sales, but with those you need to watch closely). Also remember airline tickets are cheaper if you travel on a Tues, Wed and Sat. They are also a little cheaper if you book on a Tues afternoon to Wed afternoon. i would book as soon as possible because summer cruises get filled up quick im not really sure what the price would be but its probably kinda expensive if you book now but if you book closer to those days it would probably be more expensive and i have only gone on royal carribean cruises so i would go on any type of royal carribean boat because they have really good service and the people are friendly. hope this helps.

Yes, you will get the best "VALUE" booking early. You may see a better price the day before sailing, but, I don't think you'll want that cabin. Other considerations should be what you expect from this cruise, what you would like to do, what you would like to see, and your "lifestyle. If you enjoy "Black Tie" you might want to consider Cunard, Crystal, or Regent Seven Seas. If you are a "party animal" you might want to consider Carnival. I see a few people have already suggested Royal Caribbean. That could be a good choice if you lead an "active" lifestyle. I'm a little older, and I'm NOT terribly formal. I prefer Princess' "relaxed elegance". A De Gas on the bulkhead (wall), across from my table, as I dine on King Crab legs in my shorts.

I am looking at a cruise from Southhampton to the med for 14 days on the Princess Grand for Jul 23 Aug 20 and sept 3. They just sent out the catalogs. Check with a cruise booking agency for prices or call them direct. I'm a previous customer so they offered me a discount price.
You are leaving it a bit late, try the Princess website, they have plenty of cruises in the Med, but the cheap offers will be closing soon, if not already. Any cheap cabins available close to sailing will be inside, and priced for 4 people.
The other answers provide good info. However, have you considered where you will book your cruise and how much commission you can earn with a free travel site.
